Mexico Coffee Pods

From the highlands of Chiapas, Mexico, this coffee is produced by Alma de Chiapas, an umbrella cooperative that supports and develops small farming groups working toward long-term independence and specialty coffee excellence.

Comprising 599 farmers (490 men and 109 women), the cooperative manages over 1,600 hectares of coffee farmland, providing structure for Fair Trade certification, quality improvement, and business development. Alma de Chiapas also serves as an incubator, helping member groups strengthen financial, agricultural, and organizational skills before transitioning into fully independent producer organizations under Impacto Transformador.

At 1,000–1,800 meters above sea level, coffee is grown in diverse microclimates across mountainous terrain. These elevations, combined with fertile soils and careful cultivation, help create a cup with natural sweetness and structure.

The coffee is fully washed, highlighting clarity and balance while preserving the region’s rich character. Careful processing ensures consistency and clean expression from harvest through drying.

The result is a smooth, creamy-bodied cup with medium acidity and layered notes of rich chocolate, dark cherry, and orange, creating a sweet and clean taste, reflective of both the vibrancy of Chiapas and the cooperative’s focus on growth, quality, and community empowerment.
