From the highlands of Cerro Azul, Honduras, this coffee is produced by COHORSIL (Cooperativa Cafetalera Siguatepeque Limitada), a cooperative of smallholder farmers dedicated to quality, sustainability, and long-term community development.

At 1,200–1,600 meters above sea level, the region’s lush mountains, cool temperatures, frequent mist, and fertile volcanic soils create ideal conditions for coffee cultivation. These steady, high-elevation environments slow cherry maturation, allowing sugars and complexity to fully develop.

Coffee farming in Cerro Azul has been part of the region’s identity for generations, serving as both a livelihood and a source of pride for local families. COHORSIL supports this tradition by providing technical training, shared processing infrastructure, and agronomic assistance to help farmers improve both quality and yield while caring for the land.

The cooperative also invests in community programs focused on education and reforestation, reinforcing coffee’s role in supporting long-term regional stability and environmental health.

This coffee is fully washed and sun-dried, highlighting clarity and balance in the cup. The result is a smooth, structured profile with notes of apple, dark chocolate, and nuts, stressing the richness of Cerro Azul’s landscape and the care of its farming community.
